Another Springfield MA native, now in Boston, for whom Star bread is always just out of reach. It's still available in the Springfield area, as I understand. It is light, has a soft crust and very light and soft interior. Perfect for sandwiches. Can't find it most places. They don't know what I'm talking about . My wife bakes and has searched for years for a recipe. Found it in Bologna, in a great restaurant, in small individual loaves, looking like an octopus. Found it also in Venice. But not in many places in the states. A real delicacy, I've always wondered why it wasn't more popular...
